Super Easy Refried Pinto Beans or Black Beans

Ingredients

  • 2 15oz cans of pinto beans, drained (3 cups of cooked pinto beans)
  • 1/2 small onion, finely chopped
  • 2-4 cloves of garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/8 tsp ground mexican oregano (or finely crush some dried mexican oregano if you don't have ground oregano)
  • 1/2 cup vegetable broth
  • 1/4 cup chopped cilantro
  • 1 tbsp lime juice, freshly squeezed (can add more to taste)
  • sea salt to taste

Method

  1. Heat oil in saucepan over medium heat. Add onions, cook until soften and lightly golden, about 10 mins.
  2. Add garlic, chili powder, cumin, oregano and 1/4 tsp of salt. Stir until fragrant, about 1 minute.
  3. Add beans and broth. Stir and bring to simmer. Reduce to low, cover and cook for 10 mins or until the beans are tender.
  4. Remove lid and mash some of the beans, depending on how smooth or chunky you like. Cook uncovered for 3-5 mins.
  5. Stir in lime juice and cilantro. Salt to taste.
  6. Add about 1/4 tsp of water if it's too dry.
