Peanut Sauce Noodles

Ingredients

  • 2 tbsp peanut butter powder
  • 1-2 tsp garlic, minced
  • 1/4 tsp ground ginger
  • 1 tbsp just like sugar
  • 1-2 tbsp lime juice, freshly squeezed
  • 1 tbsp Bragg Liquid Aminos or (soy sauce)
  • 2 tsp Yeo's Chili Garlic Sauce
  • 2 tbsp hoisin sauce
  • water to adjust sauce consistency
  • 1 package of soybean noodles
  • 1-3 tsp sriracha (optional)
  • 2-3 tsp toasted sesame oil optional
  • chopped scallions, julienned cucumbers optional toppings

Method

Prepare the Peanut Sauce
  1. In a medium mixing bowl, combine the peanut butter powder, minced garlic, ground ginger, Just Like Sugar, lime juice (start with 1 tbsp, add more if you like), Bragg Liquid Aminos (or soy sauce), Yeo's Chili Garlic Sauce, hoisin sauce and sesame oil (optional but super yummy). Gradually add water, 1 tsp at a time, stirring until the sauce is thick but smooth and easy to stir. (Optional: add 1 tsp or to taste of sriracha if you want a spicy kick)
Cook the noodles
  1. Follow the package instructions to cook the soybean noodles. After cooking, rinse the noodles under cold water and drain well.
  2. Toss the drained noodles with peanut sauce until evenly coated.
  3. Serve with chopped scallions and julienned cucumbers if you like. I highly recommend it!
