Super Easy Mexican Style Black Beans
Ingredients
- 1 15 oz canned black beans ( don't drain)
- 2 tsp extra virgin olive oil
- 1/2 yellow onion, diced
- 3-4 cloves garlic, minced
- 1 tsp ground cumin
- 1/4 tsp ground Mexican oregano (or 1/2 tsp dried Mexican oregano)
- 1/2 cup salsa
- 1/4 cup vegetable broth
- 1/4 cup chopped cilantro
- salt to taste
- lime wedges
Method
- Heat oil in saucepan over medium heat. Add onion and cook until soften 5 mins and add garlic, cumin, oregano and a pinch of salt. Stir for one minute.
- Add the salsa and stir for a minute. Then add the beans with liquid and broth, stir well and reduce heat to low when it starts to simmer. Cook for 15 mins, stirry occasionally. Salt to taste.
- Sprinkle with cilantro and a squeeze of lime. Enjoy!
