Super Easy Mexican Style Black Beans

Ingredients

  • 1 15 oz canned black beans ( don't drain)
  • 2 tsp extra virgin olive oil
  • 1/2 yellow onion, diced
  • 3-4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/4 tsp ground Mexican oregano (or 1/2 tsp dried Mexican oregano)
  • 1/2 cup salsa
  • 1/4 cup vegetable broth
  • 1/4 cup chopped cilantro
  • salt to taste
  • lime wedges

Method

  1. Heat oil in saucepan over medium heat. Add onion and cook until soften 5 mins and add garlic, cumin, oregano and a pinch of salt. Stir for one minute.
  2. Add the salsa and stir for a minute. Then add the beans with liquid and broth, stir well and reduce heat to low when it starts to simmer. Cook for 15 mins, stirry occasionally. Salt to taste.
  3. Sprinkle with cilantro and a squeeze of lime. Enjoy!
